This weekend, I took some time to get my kitchen — and my mindset — ready for the week ahead. I’ve learned that when I spend an hour or two prepping, my whole week flows better. I don’t find myself standing in front of the fridge at 6 p.m. wondering what to eat. Instead, I open it and feel relieved — everything’s ready, fresh, and easy.
Here’s what I prepped for this week:
- 🥚 Hard-Boiled Eggs: I boiled and peeled six of them — perfect for quick snacks or to slice on top of spinach salads. They’re simple, satisfying, and one of my favorite grab-and-go proteins.
- 🍆 Parmesan Eggplant Beef Bake: My main dish for the week — hearty, cheesy, and full of flavor. It’s one of those recipes that somehow gets better as the days go by. A few minutes in the air fryer or oven, and lunch is handled.
- 🍔 Hamburger Patties: I thawed two to cook in the air fryer for easy meals. A little seasoning, a crispy edge, and they’re great with avocado or a fried egg on top.
- 🥬 Spinach Salad Bowls: I pre-measured spinach into containers so they’re ready for quick assembly. I made a batch of lemon-tahini dressing too — creamy, tangy, and perfect with chicken or salmon.
I can mix and match all week without getting bored. The eggplant bake gives me comfort-food satisfaction, while the salads and proteins keep things light and fresh. I supplement with protein shakes for quick breakfasts or eat boiled eggs.
Meal prep doesn’t have to be complicated in order to be creative and enticing!
